Banana Bread French Toast…

December 15, 2011

I have a love for French Toast.  I would have to say that it is my favorite breakfast to make and of course Eat!!

Earlier this week I made a loaf of banana bread.  You can find the recipe for the bread here.

This morning I had the idea that I would make Banana Bread French Toast.  Oh My Goodness, was it heavenly.

It was sweet from the banana’s and syrup and savory from the egg custard and butter on top!

Unfortunately the rest of my family is not a fan of banana bread.  So I made some with french bread as well this morning.

Here is my basic recipe for French Toast:

1 Cup  Half and Half

3 eggs

1-2 Tbsp of Agave Nectar

**Honey is called for in the original recipe.  I have used it; however, it requires being microwaved before adding to prevent clumping.  The Agave Nectar does not require microwaving.

Approximately 8 slices of bread

Directions:

1.  In a mixing bowl combine all ingredients except bread.  Wisk together until well mixed.

Dip bread into mixture for about 10 seconds per side.  The amount of time really depends on the thickness of the bread.

2.  Place bread on preheated skillet.  Let cook about 2-3 minutes per side.

3.  Once all pieces have been cooked on skillet, place on a baking sheet.

Bake in a preheated 375 degree oven for 7 minutes.

This really is an important step as it sets the custard in the middle of the bread.  The edges also get really crispy and yummy!

Once done, serve it up!  I put butter and real maple syrup on ours.

The banana bread was a special treat and I can not wait to make it again.

(Even if I am the only one who will eat it!  More for me!)

You can check out another or my variations, Pumpkin Pie French Toast,  here.

Happy Eating!
