Breakfast Burritos…

Breakfast, breakfast, breakfast – it is our favorite meal of the day.  I love trying new recipes for breakfast.  The best thing is that my family just loves eating breakfast. You will not see any of us skipping breakfast!

One of our favorite breakfast items is homemade breakfast burritos.  These are super easy and the kids love them.  Most times these are more like breakfast tacos but we still call them burritos!

Ingredients:
3 Flour tortillas (I have used Ezekiel Tortillas too)
3 eggs
splash of milk
3 sausage patties
cheese (we like provolone)

Here is what you do:
1.  Cook sausage and cut into bite size pieces.
2.  Preheat skillet and put a small pat of butter in pan to melt.
3.  Crack the eggs into a bowl, add a splash of milk and whisk the eggs until well beaten.
 
4.  Pour eggs into preheated skillet.  Immediately add cut up sausage.
Let the eggs begin to set up slightly before you begin to scramble them in the pan.
5.  Warm tortillas in microwave for about 15-20 seconds, depending on the wattage of your microwave.
6.  Place a piece of cheese on tortilla.
7.  Divide the eggs and sausage among the tortillas.
8.  Top with salsa.

9.  Fold and Enjoy!

The recipe above yields 3 burritos.  I use 1 egg and 1 piece of sausage per person, so this is very easy to increase.

I really feel that starting the morning off with a  good breakfast is a healthy habit to establish. It fuels our bodies and  helps us to think clearly.  Another positive to eating a good breakfast  is that it jump starts your metabolism for the day.  And don’t forget to jump-start your “spiritual metabolism” by spending time with the Lord – as food helps our physical bodies to grow, so the Word of the Lord helps our spiritual bodies to grow.
