Meal Plan Monday…
Happy Monday to you!
We are experiencing some rather warm weather her in the south. We will be pushing close to 90 degrees this week. YUCK! It is hot and I don’t know about you but cooking can be tough when it is hot. I just remind myself that it is better for us to eat home cooked meals than to go out. I control what goes into the food I cook and I ensure that my family is eating healthy.
I am trying to cook some extra meals to stock up my freezer. This will help on those nights that I just don’t feel like cooking. Let’s face it, we all have those days. This week I will be doubling Sloppy Joe’s and Italian Beef Hoagies. I’ll put the extra meat mixtures in the freezer for a meal later in the month!
How do you beat the cooking blues?
On to our menu for the week:
Breakfast
Eggs, Toast and Craisins
Peanut Butter and Jelly Baked Oatmeal (requested by the kids!)
Pancakes and Smoothies
French Toast and Sausage
Lunch
Leftover Pizza
Chicken Nuggets, Carrots, and apple slices
Fish Sticks, Celery, and Grapes
Quesadillas, Chips and Salsa
PB&J Sandwiches, Pretzels, fruit
Snack
String Cheese and Fruit
Jell-O
Yogurt Parfait
Sliced Cheese, Meat and Crackers
Muffins and Milk
Dinner
BBQ Chicken, Mixed Vegetables and Salad
Easy Beef Stroganoff
Sloppy Joes and Tater Tots
Pork Steaks, Green Beans and Salad
Italian Beef Hoagies
Fresh Sausage, Rice and Gravy, Salad
(And yes, if you follow my meal plans regularly you will notice that we are eating many of the items from last week! Last week we were invited to friends and family a few times and the plan got moved to this week!)
Dessert
Sugar Free Chocolate Cupcakes with White Icing.
I’m going to make a batch with the intention that they need to last the week! We will see how that goes!

When it gets hot, I tend do drink more than eat. Green smoothies are my favorite and I try to have at least one a day. A lot of times we grill out when its hot so the kitchen doesn’t heat up. Grilling is so easy and adds fun summer flare to things.
