French Toast–Made Healthier…
If you have been around a while you know that I LOVE breakfast. Absolutely love it. The problem lies in the fact that I am trying eat healthier and loose some of these pounds that have snuck up on to me!!!!
My original recipe for French Toast is made with half and half. Not the healthiest choice when you are trying to watch what you eat. I needed to cut some of the calories so that I didn’t feel quite so bad when I ate it. I would actually have thoughts like, “This is so good, but I should not be eating this.”
My original recipe, using Smart-White Bread, had 300 calories for 2 slices of French Toast. I have modified my original recipe by using Almond Milk in place of Half and Half and saved 80 calories. 2 slices of my modified recipe has 200 calories. Add 2 slices of Turkey Bacon and you have a well rounded breakfast for under 300 calories.
Here is the new Healthier recipe:
1/2 Cup Almond Milk
3 Eggs
2 Tbsp. Agave Nectar
pinch of salt
dash of vanilla
6 Slices Wonder Smart White Bread – 50 calories per slice
Directions:
Preheat oven to 375 degrees.
Preheat Skillet
In a medium bowl mix together the first 5 ingredients.
Dip each slice of bread in the mixture for about 10-15 seconds. Be careful the bread will soak up the mixture quickly.
Place bread on preheated skillet. Let cook for 2-3 minutes on each side.
Once all pieces have been cooked on skillet, place on a baking sheet.
Bake in 375 degree oven for 7 minutes.
This last step of baking in the oven sets the custard and it is absolutely divine!
The best part is that I made these changes and did not tell the kiddos. They raved about it and said it was SOOOOOO good, before I could even ask them. I consider that a success!
